WHAT IS THE BEST KIND OF WATER TO USE?
The quality of the water you use, has a very big impact on the quality and flavour of your tea. Minerals and hardness can negatively impact the taste, look, purity, colour and aroma.
You should never use tap water to make tea, but either filtered water or bottled water that is low in minerals and has a slightly acidic pH.
You can find all this info on the label of your bottle of water. You should try to get as close as possible to:
- pH between 6 and 7 (ideally between 6.2 and 6.8)
- dry residu <50 mg/L
AT WHAT TEMPERATURE WATER SHOULD I INFUSE MY TEA?
Besides the kind of water, the temperature you use to infuse your tea also has a big impact. E.g. if you use boiling water on green tea, it becomes very bitter.
The ideal temperature for your tea is:
- white tea: 70-80°C
- green tea: 50-70°C
- yellow tea: 75-85°C
- oolong tea: 85-95°C
- black tea: 90-95°C
- pu erh: 95-100°C
- infusions: 100°C
